Hello high carb day!
Well, I've really outdone myself this time, you guys. I think we all reserve all things Yams/ Sweet Potatoes for Christmas and Thanksgiving, but don't give them much more thought beyond that. I was craving Candied Yams in a huge way and I LOOOOVVVEEE sweet potatoes, but didn't want to have to make a big tray because I knew it'd go uneaten and I can't stand to waste food, thus my Single Portion Candied Yams recipe was born. (Yes, I know yams and sweet potatoes aren't the same thing, but it's my recipe, so that's what I'm calling these. HAHAHA.) These do take some time and depending on heat sources, you will need to watch/ check on them at certain stages, but the good news is, they are great for meal prepping and require very few ingredients. Make these in large batches and refrigerate as many as you need for the week. Then, when you're ready to eat them or prepare them for your lunch that day, all you have to do is throw your Single Portion Candied Yams in the oven, top with marshmallows and broil for a couple of minutes. My grandma gave me the cutest little Temp-tations mini loaf pans for Christmas and I'm not a huge bread maker, nor am I fond of their lack of design selection, but they ended up working out perfectly for my Single Portion Candied Yams! The Temp-tations brand can be really pricey and I'm a big fan of Wilton products so I suggest these affordable mini loaf pans I found on Amazon. Since they are the same size, the macronutrients {listed at the bottom of this page} will be the same.
Let's get to making these Single Portion Candied Yams, shall we?
What you'll need: Ingredients:
Instructions:
Skin your sweet potato, cut it in half and put your sweet potato in a stovetop save pan. Fill with water to cover half to 3/4 of the sweet potato halves. Cover and boil on high until your sweet potato is "mushy" and you can mash it, similar to a mashed potato, but don't mash it yet! Once your sweet potato is mushy, drain the water and place your cinnamon and butter in the pan with the sweet potato and return it to the stove top on low heat to melt the butter, mashing and stirring the sweet potato to blend with the butter and cinnamon the whole time. Once the butter is fully melted...
Pour your mixture into your mini loaf pan...
Top your mixture with your marshmallows as shown in the photo below...
This is where the watching part begins. Set your oven to broil. Once heated, place your dish in the oven, not too close to the top, a notch or so above the middle and close your oven. I use my oven light to watch the tops of the marshmallows brown, but if you must have a time estimate (haha) it took about 4 minutes to brown the marshmallows in the photo below. Oven temps and times can vary and broiling is a very quick process, which is why I suggest watching them and make sure you use oven mitts to remove. This will be a HOT dish!
I like my marshmallows a little more burnt, so I left them in for a minute and a half longer after I took this picture:
I wanted them to be perfect and pretty just for you! (LOL)
This was my finished product:
If you are meal prepping these, I highly suggest this Wilton 4 cavity loaf pan on Amazon. You can line each cavity with non stick parchment paper and transfer to any to-go dish you may need for work or for snacking at home. Using this Wilton 4 cavity loaf pan, the macronutrients for the servings listed below will remain the same. If you decide to go with a different sized pan, the macros will vary.
Truth be told, this Single Portion Candied Yam recipe is huge so it could actually be split into 2 servings, especially if you don't want it to be your whole meal and you want to prepare it with a yummy chicken or something. I've gone ahead and calculated the nutrition facts for both!
For the entire dish: 534 Calories C/ 80.4g F/ 22.4g P/ 4.3g Half portion: 267 Calories C/ 40.2g F/ 11.2g P/ 2.15g It's no secret that sweet potatoes are nutrition powerhouses packed with one of the best carbs your body can eat and cinnamon has health benefits as well, but if you're looking to shave some calories off this dish, you can omit the marshmallows and save 135 calories, which will knock off -33g in carbs for the full serving and -16.5 for the half portion.

I'm one of those moms that likes to be over-prepared. I hate when things sneak up on me at the last minute and leave me scrambling to throw things together (that doesn't help with my OCD & ADD), so I'm doing this St. Patrick's Day baby #OOTW super early so that doesn't happen to you either!
Bare minimum, we have to have the cutest St. Patrick's Day shirts, then I build from there. Lucky for you, Liv & Co. has this adorable Luck Be A Lady shirt for little lassies of all ages. I love this shirt because it doesn't specifically mention St. Patrick's Day, and since we are Irish, we can wear them year round. Because on top of being an over-preparer, I'm also extremely frugal. (haha)
Do yourself a favor and go snag this shirt now HERE.
I decided to pair it with a tutu, some striped socks (currently on sale) or glitter shamrock patch leg warmers, a headband, and some adorable little shoes (for babies).
I love these green glitter shamrock patch leg warmers because they are handmade and I love supporting small businesses. You can get them HERE (and use code 15PERCENTPROMO to save!).
Which items will you pair together to complete the perfect St. Patrick's Day outfit for your baby or toddler girl? Tell me in the comments below!

One thing I think I underestimated the most about having babies is having enough blankets. You really can't have too many blankets. We had stroller blankets, car seat blankets, nursing cover blankets, receiving blankets, swaddle blankets, and I stashed them everywhere. It was the one thing I found myself on the way out the door always making sure I had. The great thing about these baby blankets I've chosen to share is their versatility. I'm extremely frugal, so what I appreciate about these blankets is that they are made from lightweight, breathable fabrics, so they can be used year round. I hate buying seasonal items, especially for babies, because they grow out of whatever it is by that season the next year. I also love their size. A lot of baby blankets are really small. These blankets are large enough to grow with your baby all the way through their toddler years. Let's shop, shall we?... 1.) Outer Space Spaceships and Rockets Blanket What makes this blanket a favorite? What DOESN'T make it a favorite is more the question. I mean, the smile on that baby's face says it all! Get it HERE. 2.) Donuts Blanket The fun part about these baby blankets is that a lot of them come with coordinating bodysuits to match. Donuts are all the rage right now, so it's no surprise that this donut print blanket made the list. You can get it HERE. 3.) Dreamy Muslin Double Gauze Swaddle Wrap This cotton muslin baby blanket it so dreamy! The perfect blanket for swaddling your little bundle of joy and an excellent gender neutral baby shower gift. You can get yours HERE. 4.) Pink Camouflage Baby Girl Blanket Too. Cute. For. Words. This camo baby blanket is the perfect gift for every daughter of a hunter, right?! You can even get the matching pink headband! Find it HERE. 5.) Outdoorsy Blanket This blanket is so Colorado! Perfect for your outdoorsy baby girls and boys! Get this blanket HERE. 6.) I Whaley Love You Whale Blanket I always wanted to be a marine biologist growing up, so of course, I had to add this whale blanket to the list! Get it HERE. 7.) I bought a bunch of peppers to make stuffed peppers for dinner the other night, but got lazy and didn't, so this morning I got up determined to make some type of stuffed pepper for breakfast. I got online and began searching recipes and they all called for odd ingredients, most of which I didn't have on hand, nor did I want the complexity of. I just wanted something quick and simple to toss in the oven and forget about it (LOL). What makes these stuffed breakfast peppers even better is that they are keto friendly and if you are vegan, simply omit the bacon (though, I'd add some other type of flavor/spice to replace the yummy taste of bacon) from this recipe. These stuffed breakfast peppers are literally the easiest thing to make. They will take you 35 minutes; 5 minutes to prep and 30 minutes to cook. I put pictures of each step below, but let's start with what ingredients you'll need... What you'll need: 1 green pepper (you can use any color, I just used green) 3 strips of bacon (cooked and chopped) 2 large eggs 1/2 cup shredded mild cheddar cheese (approximately) First you're going to pre-heat your oven to 400 degrees and apply a thin layer of oil to the bottom of an oven safe dish. Cut your green pepper lengthwise and remove the seeds and membranes. Next, you will sprinkle some shredded mild cheddar cheese in the bottom of your green peppers. Add a layer of chopped, cooked bacon over the cheese, making sure to leave enough room for the egg in the next step. (Set aside a sprinkle of bacon to garnish the top once the stuffed peppers are through cooking.) Crack a large egg, carefully as to not break the yolk, and pour it right on top of your bacon layer. Place your stuffed peppers in the oven on 400 degrees for 30 minutes or until egg looks fully cooked. Sprinkle leftover bacon bits and shredded cheddar on the top to garnish and serve! Did you try these amazing bacon, egg, and cheese stuffed breakfast peppers? Tell me what you thought in the comments below and subscribe to our blog HERE! If you know me, you know I am frugal as all get out. I started waxing my own eyebrows 10 years ago to save money at the salon and I took off my acrylic nails around 5 years ago and started doing my own.
My daughter asked me to take she and her friend to the nail salon not long ago and I just CAN'T. DO. IT. The last time I took her to get a manicure at the nail salon with her friend I ended up leaving $46 poorer and wondering how a $7 manicure turned into $46, but anywho... This last time I was like, "I can do your nails. I'm better at it than the salon, anyway." (LOL)
So I took to my trusty Silhouette Cameo (the best die cut crafting machine on the market and it's currently on sale for $100 off if you click HERE) and sized some hearts to 0.30x0.30 and loaded up my metallic gold Oracal 651 vinyl , set my settings to a blade 2, speed 8, and thickness 9 and cut the hearts. Although, if you don't have a Silhouette Cameo cutting machine you can click HERE to buy some super cool ones on Amazon.
I applied an Orly rubberized basecoat , which is the best basecoat on the market. (Ask me how I know ;) ) ... Well, funny you should ask -- you see, when I first began painting my own nails I went through like, every nail product brand the market has to offer trying to figure out why my polish kept clumping, smudging, chipping, etc., and all those issues came to a halt when I began using this Orly basecoat. Truth be told, I've had the same bottle for almost 2 years and I still haven't run out yet. #winning !
After allowing plenty of time for the basecoat to dry, I applied Insta-Dri Go For Gold nail polish to all fingernails except her ring fingernails and I applied Insta-Dri Red Red nail polish to her ring fingernails and let them dry completely. I cannot stress enough how important it is to let your nails dry completely in between coats.
Ask me why I use Insta-Dri....
Thank you for asking, don't mind if I do... I use Insta-Dri almost exclusively for 3 reasons. #1.) It is a one and done polish. You only need one coat and you're done. Other polishes may *say* they are single coat nail polishes, but Insta-Dri truly is and you can tell the instant you apply it. #2.) The brush size. The brush is the perfect size to where you only need to apply one or 2 swipes of polish, as opposed to the typical nail polish brushes that that you have to apply 4-5 swipes to cover the whole nail. #3.) It dries SUPER fast. When I say super fast, I mean it.
After allowing her nails to dry, I applied a Sally Hansen no chip top coat to the gold nails only. We aren't going to apply a top coat to the red nails until after the hearts are applied.
Now to the fun stuff... Let's apply those hearts!
I took my trusty tweezers (these gold precision tweezers made in Germany are my favorite),
gently peeled the gold metallic hearts from the backing, and slowly applied them to where I wanted them on her nail. We decided to place them in the corners with a little slant (cute!). You want to be careful to place them exactly where you want them the first time and try not to touch any other part of the nail...
Once you've finished placing the hearts where you want them, apply your Sally Hansen no chip top coat and let that dry. Voila! Valentine's Day heart nails! **EDITED TO ADD: Everyone wants my pink nail polish color in the last picture. It is Poptastic by Color Club. It's the only non- Insta-Dri color I use and I have literally used it almost every single time I paint my nails for the past 10 years. It used to be called Pink Flame. I'll add it to the linked products below!

Love is in the air and Valentine's Day will be here before you know it! It may seem like a long way away, but us mom's know how quickly it sneaks up. Lucky for you, we are here to prepare you for the holiday of hearts with fun Valentine's Day crafts to do with your kids and must have Valentine's Day shirts and accessories to celebrate the day in.
Let's get started....
Craft idea #1: Red slime.
If you have older kids, chances are they've already started messing around with slime recipes. The problem with slime recipes online is the constant trial and error -- it gets expensive! You have the slime that gets too sticky, slime that falls apart, and it's just hard to know which slime recipes are going to deliver the perfect consistency, so we went ahead and took the guesswork and headache out for you and found fool proof slime! This slime kit on Amazon allows you to make slime in just 3 easy steps! We upgraded to the 4 count + activator so we'd have green for St. Patrick's Day! Subscribe to our blog HERE to be notified for that blog post release + our YouTube video. Subscribe to our YouTube channel HERE. You can purchase the kit we used below.
Craft idea #2: Mini heart cakes.
I cannot even contain my excitement about these mini heart cake pans. We searched all the local craft & grocery stores and just couldn't find what we were looking for, but of course, Amazon had them for us! Click below to get yours!
Hawkins and I made these mini heart cakes last year. We like to customize them and give them to neighbors, friends and family, like people do with cookies and such at Christmastime.
Last year was a sloppy mess because we used cookie cutters to pour the cake batter in to and it ended up leaking off the sides and I had to cut around them to form the cakes and so on, so this year, I simplified things for us and grabbed these amazing cake pans. I'm going to use them for mini breakfast casseroles and more, so make sure you subscribe to our blog HERE. Stay tuned for our YouTube video making these this year and subscribe to our channel HERE. Purchase the cake pans HERE.
Is it really even Valentine's Day without the perfect Valentine's Day shirt? Shop the Liv & Co. Valentine's Day collection HERE.
Craft idea #3: Heart Shaped Crayons.
As a kid, one of my favorite parties at school was the Valentine's Day party. After having kids, it's even more fun decorating Valentine boxes together and making Valentine's for their classmates. We are all about recycling and big on not being wasteful, which makes this craft perfect, because it's an excellent way to recycle broken crayons. I don't know about you, but I'm OCD, so those broken crayons that lay in the bottom of the bin -- I can't throw them away (because, wasteful), but we also can't use them, so imagine my excitement when I get to finally clean the bottom of the bin out and the kids have fun stuff to color with! I'm also that mom that is always looking for a sugar/ candy alternative, so these heart shaped crayons are perfect for that as well. As you can see, we are winning all around with this craft idea! What you'll need: - Silicone heart mold (this one is my fave):
I love this mold for its affordability and multi-use features. We use this for ice cubes too, but that's a whole other blog post!
- A sharp knife (this one is my fave?):
- And you'll need about 50-100 crayons depending on how many heart crayons you need to make.
Instructions:
Craft idea #4: Heart shaped paper cutouts.
I love this paper heart cut out craft because it is great for all ages. It's great for younger toddlers because mom / dad / caregiver can cut out the heart and have your child color or decorate the heart, and for older toddlers that are familiarizing themselves with scissors can cut out the heart with adult supervision and decorate it themselves. This is a very versatile Valentine's Day craft idea because these heart cut outs can be used as Valentine's Day cards, you can use a hole punch and tie a string to them so they can hang, so many ideas! What you'll need:
These awesome pipe cleaners come in all sorts of colors so you can use them to craft every holiday!
This is, hands down, the best washable paint for kids. It is water based and non toxic for worry free crafting!
